I must preface by saying that I'm normally not a fan of the 2 main ingredients in this recipe, but upon sampling this is my new favorite appetizer and I plan to make it for every get together from here on out. Thanks Kari for opening my eyes and challenging my taste buds.
1 jar marinated artichoke hearts
2-8oz boxes of cream cheese, softened
2 garlic cloves, minced
1 handful frozen chopped spinach, thawed and squeezed dry
2 Tbsp. mayonnaise
1/4 c. Parmesan cheese + more for top
Mix all ingredients, place in an oven safe dish, sprinkle with Parmesan cheese, bake at 350* till golden brown. Serve with pieces of sourdough bread (a must!!).
